# Directions:

01 - Preheat oven to 350°F. Grease a 9x13 inch baking dish.
02 - Bring a large pot of salted water to a boil. Cook elbow macaroni until just al dente, about 1–2 minutes less than package directions. Drain and set aside.
03 - In a large saucepan over medium heat, melt 4 tbsp butter. Whisk in 1/3 cup flour and cook for 1–2 minutes until bubbly but not browned.
04 - Gradually whisk in 4 cups milk, then add Dijon mustard, salt, pepper, and paprika. Continue whisking until the sauce thickens and coats the back of a spoon, about 6–7 minutes.
05 - Remove from heat. Stir in grated cheddar and Gruyère until fully melted and smooth.
06 - Gently fold the cooked macaroni into the cheese sauce until thoroughly coated.
07 - Pour the macaroni and cheese mixture into the prepared baking dish, spreading evenly.
08 - Combine panko breadcrumbs, melted butter, Parmesan, and paprika in a mixing bowl. Sprinkle evenly over the casserole.
09 - Bake uncovered for 30–35 minutes, or until the topping is golden and bubbling.
10 - Allow to rest for 10 minutes before serving.
