01 - 2 slices whole-grain or sourdough bread

→ Avocado Mixture

02 - 1 ripe avocado
03 - 1 teaspoon lemon juice
04 - 1/4 teaspoon sea salt
05 - 1/8 teaspoon freshly ground black pepper
06 - 1/8 teaspoon red chili flakes

→ Toppings

07 - 2 large eggs
08 - 1 tablespoon fresh chives or cilantro, chopped
09 - 1 teaspoon extra-virgin olive oil

# Directions:

01 - Place bread slices in toaster or grill pan and cook until golden brown and crisp throughout.
02 - Halve the avocado lengthwise, remove the pit, and scoop flesh into a small mixing bowl.
03 - Add lemon juice, sea salt, black pepper, and chili flakes to the bowl. Mash with a fork until mostly smooth with slight texture remaining.
04 - Heat frying pan over medium heat. Crack eggs and cook to preferred doneness, either poached in simmering water or fried until whites are set.
05 - Spread mashed avocado evenly over each toasted bread slice, covering surface completely.
06 - Place cooked egg atop each toast. Drizzle with olive oil and scatter chopped chives or cilantro over the surface.
07 - Plate immediately while bread remains crisp and eggs are warm.

# Top Tips:

01 -
  • It transforms five minutes and minimal effort into something that feels legitimately special
  • The ratio of creamy to crunchy to bright is practically foolproof if you follow your instincts
  • You probably have everything you need already, making it perfect for those moments when you need comfort food now
02 -
  • Room temperature avocado mashes more easily and incorporates the seasonings better than cold from the fridge
  • If your avocado isn't quite ripe enough, it won't mash properly—better to wait a day than force it and end up with disappointing chunks
  • The bread toasts while you prep everything else, so multitasking is actually built into the process naturally
03 -
  • Keep the pit in the unused half of your avocado to prevent browning until you're ready to use it
  • A tiny pinch of cumin or everything bagel seasoning creates this unexpected depth people can't quite identify
  • Room temperature ingredients come together more cohesively than cold ones straight from the refrigerator
