Tender salmon paired with a fresh mango avocado salsa for a nutritious, zesty summer meal.

# What You Need:

→ Salmon Preparation

01 - 4 salmon fillets, approximately 6 oz each, skin-on or skinless
02 - 2 tablespoons olive oil
03 - 1 lime, zested and juiced
04 - 1 teaspoon garlic powder
05 - 1 teaspoon paprika
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper

→ Mango Avocado Salsa

08 - 1 large ripe mango, peeled and diced
09 - 1 ripe avocado, diced
10 - 1/4 small red onion, finely diced
11 - 1 small red bell pepper, diced
12 - 1 jalapeño, seeded and finely chopped (optional)
13 - 2 tablespoons fresh cilantro, chopped
14 - Juice of 1 lime
15 - Salt and black pepper, to taste

# Directions:

01 - Set oven temperature to 400°F. Line a baking tray with parchment paper or foil.
02 - In a small mixing bowl, whisk olive oil, lime zest, lime juice, garlic powder, paprika, salt, and black pepper until fully combined.
03 - Arrange salmon fillets on the prepared baking tray. Brush each fillet uniformly with the seasoning mixture.
04 - Bake salmon for 12 to 15 minutes, or until it flakes easily with a fork and is just cooked through.
05 - In a medium bowl, gently combine diced mango, avocado, red onion, bell pepper, jalapeño (if using), cilantro, lime juice, salt, and black pepper until evenly mixed.
06 - Transfer baked salmon fillets to serving plates and generously top each fillet with mango avocado salsa.
07 - Serve immediately, garnishing with additional cilantro and lime wedges if desired.

# Top Tips:

01 -
  • The mango-avocado salsa is so lively that it feels like summer in every bite, even if you're eating it in the middle of winter.
  • The salmon cooks quickly and always turns out tender, so it's become my go-to for last minute weeknight meals.
02 -
  • If the avocado is too ripe, it can make the salsa watery—I've made this mistake and now always check firmness.
  • Marinating the salmon for just 15 minutes transforms the flavor, but any longer and it can start to 'cook' in the lime.
03 -
  • Check salmon for pin bones with clean fingers; removing them saves awkward mid-bite surprises.
  • A squeeze of lime just before serving lifts the whole dish and makes every bite sparkle.
